Fragrant wine with aromas of citrus and flowers on a vanilla background. Soft and full with excellent and long taste-olfactory persistence. Fresh and savory at the same time. It is good right away or age up to 5-7 years. Harvested by hand in small boxes. Whole grapes, before destemming, are refrigerated at 8-10°C. Once crushed and softly pressed, the flower must is separated and decanted by static sedimentation at low temperature, inoculation on the limpid using selected yeasts, malolactic fermentation in barrique. This is followed by an aging period on fine lees of 4-6 months, with weekly basting of the lees. The cycle ends with bottle aging of about 8-10 months before marketing.
