MACERATION, WINEMAKING AND BLENDING
Grapevine:
100% Pinot Noir
Cru:
A dozen or so Cru mainly from the southern and northern sectors of the Montagne de Reims-including the famous Côte de Bouzy-are favored, particularly the Cru of Ambonnay, Bouzy, Louvois and Tours-sur-Marne.
Maceration base:
Grapes from the selected plots are sorted and destemmed before being placed in the tank.
The maceration that lasts 48 to 72 hours following the harvest provides unparalleled aromas, thus revealing all the richness of the best Pinot Noir Cru.
Vinification and blending:
Aging: ideal minimum 5 years.
