MACERATION, WINEMAKING AND BLENDING
100% Pinot Noir
A dozen or so Cru mainly from the southern and northern sectors of the Montagne de Reims-including the famous Côte de Bouzy-are favored, particularly the Cru of Ambonnay, Bouzy, Louvois and Tours-sur-Marne.
Grapes from the selected plots are sorted and destemmed before being placed in the tank.
The maceration that lasts 48 to 72 hours following the harvest provides unparalleled aromas, thus revealing all the richness of the best Pinot Noir Cru.
Vinification and blending:
Aging: ideal minimum 5 years.
An elegant dress whose color naturally evolves from a pretty raspberry hue to salmon hues.
Frank nose of extraordinary freshness and wide range of red fruits: raspberry, currant, strawberry, black cherry.
A forthright, savory attack for this smooth, round wine. In the mouth it offers the sensation of diving into a basket of freshly picked red fruits.
Serving temperature: between 8°C and 10°C.
