THE CLIMATE: The 2015 vintage began with a not-too-cold winter, with temperatures that were 1-3°C above seasonal averages in February and March. Rainfall, although confined to a few days, has been heavy. Spring, with temperatures in the average range, was mild and characterized by sporadic and weak precipitation. Summer also followed the spring pattern, with little rainfall and very high average temperatures with peaks of intense heat in July. As is often the case in Bolgheri, the Ferragosto storms led to a smooth start to the harvest.
VINIFICATION: Levia Gravia 2015 is a special wine: its grapes come exclusively from San Biagio, a vineyard located at 210 m. altitude above sea level, an exceptional position for the Bolgheri area.
The harvest began in the last days of August for the Merlot grapes, which was followed by the Cabernet Franc harvest, and then ended in early October for the later variety, Cabernet Sauvignon.
The grapes were harvested by hand and placed in 12-kg boxes, with separate picking by variety and plot. Sorting took place first in the vineyard and then in the winery at the sorting table before destemming. The berries were then placed in temperature-controlled stainless steel wine vessels, where alcoholic fermentation began and continued for two weeks. After malolactic fermentation, the wine was decanted into French oak barrels of different toast sizes where it remained for more than 20 months. Before being released for marketing, the wine was aged in bottles for another 6 months.
DESCRIPTIVE NOTES: Intense ruby red in color, it shows ripe dark fruit on the nose: cherry, cassis and blueberry accompanied by notes of tobacco and herbs. In the mouth it is austere, dense and at the same time elegant and harmonious with very fine tannins. The finish is long and persistent, and fruity hints tie in with aromatic notes.
PAIRINGS: ideal with red meats, game, and venison but also with fossa and blue cheeses and with meat- or cheese-filled pastas.
