Vinification: The grapes are gently destemmed and left to macerate for a short period. It is then soft-pressed and the resulting must is clarified by decanting. The must then ferments at a controlled temperature in stainless steel vessels.
Aging: At the end of fermentation, the wine is kept on the lees in stainless steel tanks for six months. Bottled wine is normally stored in temperature-controlled rooms for at least two months.
Sensory notes:
Color: straw yellow with hints of gold
Nose: intense, broad, enveloping. Pronounced floral notes with orange blossom, jasmine and elderflower in evidence blend with hints of white fruit, ripe apple and white peach, and yellow tropical fruit, pineapple and papaya. Warm hints of custard and candied fruit.
Taste: full, complex, velvety. Soft attack with notes of pear and dried fruit enriched in the evolution by the freshness of bergamot and balsamic and mauve hints. Good persistence and pleasant aftertaste of white and yellow flesh fruits.
Pairings: Especially good with first courses, white meats, fresh cheeses, fish dishes.
