Vinification: The grapes are delicately de-stemmed and left to macerate for a short period. It is then softly pressed and the must obtained is clarified by decanting. The must then ferments at a controlled temperature in stainless steel containers.
Aging: At the end of fermentation the wine is kept on the lees in stainless steel containers for six months. The bottled wine is normally stored in temperature-controlled rooms for about two months.
Sensory notes: Color: full yellow with fascinating golden and green reflections
Bouquet: elegant, intense, captivating. The varietal expression of citrus, tomato leaf and almond is embellished with fruity notes of gooseberry, apricot, kiwi and yellow peach with floral hints of lemon, jasmine, old rose and citrus fruits of bergamot and cedar peel. Almost viscous aromatic perception in terms of intensity and structure.
Taste: enveloping, complex, lively. Soft attack with increasing freshness. Notes of ripe Golden apple, dried fruit and vanilla blend with balsamic hints of sage and thyme. Pleasant tannic structure and good persistence with a typical slightly bitter note in the finish and citrus aftertaste.
Pairings: Traditional as an aperitif, it goes perfectly with raw ham, salami and sausages in general; it also pleasantly accompanies fish dishes, fresh and fatty cheeses.
