Livio Felluga Pinot Grigio 2021
This famous grape variety is derived from a gem mutation of Pinot Noir and, preferring cool climates, finds its ideal habitat in the hills.

Vinification: The grapes are gently destemmed and left to macerate for a short period. It is then soft-pressed and the resulting must is clarified by decanting. The must then ferments at a controlled temperature in stainless steel vessels.
Aging: At the end of fermentation, the wine is kept on the lees in stainless steel tanks for six months. Bottled wine is normally stored in temperature-controlled rooms for about two months.
Sensory notes:
Color: bright yellow with pinkish and copper highlights
Nose: complex, powerful, enveloping. Rich, multifaceted bouquet: the floral contribution of orange blossom, daisy and white wisteria evolves into ripe fruit notes with apricot, percoca, white melon and yellow peach in evidence. Sweet sensations of custard and crème brûlé are well balanced by the freshness of citrus.
Taste: voluminous, crisp, firm. Full and progressive. The attack is complex and velvety, fresh and enveloping. Excellent aromatic correspondence on the palate, pineapple, melon, Nashi pear, yellow peach and sweet pastry notes are found, which are enriched by a nice freshness and pleasant savoriness. The finish is fresh, taut and very persistent with citrus and white fruit aftertaste
Pairings: Especially good with fish dishes, shellfish appetizers, risottos and vegetable casseroles.
