Vinification: The grapes were carefully destemmed and the fruit was then crushed. Fermentation was conducted with maceration on the skins at controlled temperature in stainless steel containers. The juice was reassembled frequently on the cap for about three weeks in order to extract the color and aroma compounds from the skins. After fermentation, crushing was carried out.
Aging: The wine is racked into small French barriques where it ages for about 12 months. The bottled wine was aged in temperature-controlled cellars for a minimum of four months.
Sensory characteristics:
Appearance: bright ruby red with slight violet notes.
Nose: broad and varied, clear notes of ripe plums and blackberries, penetrating and vigorous in development with slight hints of spices and Mediterranean scrub, sandalwood and incense on the close.
Palate: marked by the pleasant return of plum and black berry fruit, it develops with remarkable complexity, medium body of good softness, an invigorating acidity that adds persistence to the finish and aftertaste.
Food pairings: Red meats, roasts, game birds and aged or medium-aged cheeses.
Serving temperature: 17 – 18 °C
