Vinification: The grapes are gently destemmed and left to macerate for a short period. It is then soft-pressed and the resulting must is clarified by decanting. The must then ferments at a controlled temperature in stainless steel vessels.
Aging: At the end of fermentation, the wine is kept on the lees in stainless steel tanks for six months. Bottled wine is normally stored in temperature-controlled rooms for about two months.
Sensory notes:
Color: straw yellow with delicate green highlights
Nose: intense, fresh and refined. The delicacy of white spring flowers, peony, and calla lily blossoms blends perfectly with the fruity notes of white cherry, strawberry pulp, and Renetta apple. Refreshing hints of citrus and thyme complete the bouquet.
Taste: lively, dynamic and pleasantly mineral. Citrus notes of cedar and lime and lively acidity give a lingering feeling of freshness. Delicate but enveloping with slightly balsamic aftertaste.
Pairings: excellent as an aperitif, this wine pairs beautifully with battered vegetables and flans, with flavorful cheeses, and with fish dishes.
