Vinification: The grapes are gently destemmed and left to macerate for a short period. It is then soft-pressed and the resulting must is clarified by decanting. Fermentation takes place at a controlled temperature in stainless steel vessels.
Aging: At the end of fermentation the wine is kept on the lees for six months. Bottled wine is normally stored in temperature-controlled rooms for at least two months.
Sensory notes:
Color: canary yellow with golden highlights
Scent: intense and captivating. Elegant notes of white and yellow flowers: jasmine, lily of the valley, golden lily and mimosa and fresh fruity hints of lime, amolo and Golden apple. Lemon custard finish.
Taste: lively, balanced and enveloping. Pleasant presence of ripe white fruit, medlar, white cherry, gooseberry and kiwi. Balsamic hints in closing and good persistence with citrus aftertaste.
Pairings: Excellent as an aperitif, it goes well with asparagus, vegetable soups, legume purées and marinated fish.
