Lo Sparviere Cuvee 7 Franciacorta DOCG Brut Cuvee 7 Bio
Cuvée n.7 is the most contemporary Franciacorta among the Sparviere wines. The cuvée n.7 embodies the territorial identity of the Sparrowhawk and the peculiarities of the terroir, expertly interpreted by the work of the oenologist Francesco Polastri. Born in 2014 from a selection of 10 cuvées created using different percentages of wines from individual vineyards, the cuvée identified with the number 7 proved to have the perfect stylistic figure to describe our territory. Hence the name “Cuvée n.7“. A Franciacorta 100% Chardonnay that conquers for its freshness.

VINEYARD EXPOSURE: Towards South – West on a slight slope at 200 meters above sea level in the municipality of Provaglio d’Iseo
SOIL ORIGIN AND COMPOSITION: Marly with a prevalence of silt and red clay
YIELD PER HECTARE: 80 quintals
HARVEST: Manual in small crates with selection of the grapes in the vineyard
HARVEST PERIOD: Between the last ten days of August and the first of September
VINIFICATION: From the vineyard the Chardonnay boxes are placed in a refrigeration cell which has a temperature of 4 ° C, for a duration of 24 – 36 hours.
The grapes thus cool down and reach a temperature of 10 ° C. This process favors a better extraction of the varietal aromas. The cooled grapes
are brought into the press for soft pressing of the whole bunches: only 60% of the must obtained from the first pressing is used for this particular
cuvée. Fermentation is carried out slowly at 16 ° C to retain all the aromas. The maturation of the base wine on the lees lasts about 7 months in tanks
of stainless steel and the tirage for the second fermentation takes place in the month of May

expressing a softness in the structure that is clearly perceived

GASTRONOMIC COMBINATION: Perfect as an aperitif with vegetable puffs and canapés with marinated salmon, it prefers delicate appetizers, especially fish, hot and cold. It also goes well with light first courses, seafood risotto and lean tortelli. Try it with medium-aged goat cheeses
