VINEYARD EXPOSURE: North – East at 150 – 200 meters above sea level in the municipality of Provaglio d’Iseo
SOIL ORIGIN AND COMPOSITION: Autochthonous with clayey-calcareous matrix
YIELD PER HECTARE: 80 quintals
HARVEST: Manual in small crates with selection of the grapes in the vineyard
HARVEST PERIOD: From the third decade of August
VINIFICATION: From the vineyard the Chardonnay boxes are placed in a refrigeration cell which has a temperature of 4 ° C, for a duration of 24 – 36 hours.
The grapes thus cool down and reach a temperature of 10 ° C. This process favors a better extraction of the varietal aromas. The cooled grapes
are brought into the press for soft pressing of the whole bunches: 80% of the must ferments in stainless steel tanks at a controlled temperature and the
remaining 20% ​​in 5 hl tonneaux in which the malolactic fermentation takes place. The wines rest on the first fermentation yeasts until assembly
