Malvasia harvested at the right degree of ripeness and immediately vinified, a dry wine with good acidity that enhances its flavor, with notes of aromatic and floral herbs that recall the typical Mediterranean maquis of the island. It expresses the volcanic territory in its essence. This is why Didyme bears the ancient name of the island of Salina.
