Maraschino Luxardo cl 70
Maraschino Luxardo Originale is still made according to the recipe devised by Girolamo Luxardo in 1821. The fruit is harvested between late June and early July and brought to the plant where it undergoes soft pressing so that the various components of the fruit can be separated.
Morello cherry juice, leaves and other plant components are steeped in alcohol in porous wooden vats. After at least two years of maceration, copper stills enter the scene, where steam distillation with fractionation of heads and tails takes place. Only the “heart,” the Maraschino distillate, is kept, which is in turn placed in vats for final aging. The last stage is the transformation into liqueur by adding water syrup and refined sugar.
Special attention is paid to the wood from which the vats are constructed. The first stages of processing all take place in larch vats, that is, in a porous wood that ensures strong oxidation and imparts a particular bouquet to the product. All subsequent stages of aging instead take place in special ash vats. In fact, one of the characteristics of Maraschino is that it is a transparent liqueur, which must not lose this characteristic even in the course of aging.
Transparent, with typical morello cherry aroma of excellent aromatic intensity, fine and well blended, without aggressive notes. The taste is typical morello cherry, harmonious but firm, unusual in sweet liqueurs for the fabric of the distillate, clearly perceptible despite the moderate alcohol content. Great roundness of flavor, and surprising aromatic persistence.
The slender emerald-green bottle with a red cap is still hand-stuffed in the company today, just as it was in the days of Zara. A provision that served to prevent breakage during shipping.
Depicted on the label are some of the medals won in international competitions from the mid-19th century to the present, as well as Girolamo Luxardo ‘s signature with an upside-down “G.” A ploy that served to prevent early counterfeiting.
Luxardo Maraschino can be used as an ingredient in many international cocktails or enjoyed neat as an after-dinner. It is ideal on fruit salads, strawberries, pineapples, oranges etc., or on ice cream.
