Vinification: after mechanical crushing and destemming, the must, in the pre-sence of the skins, ferments spontaneously thanks to the addition of pied de cuve containing indigenous yeasts, the only ones best able to inter-preciate our terroir. After 7 moons (about seven months) of maceration with the skins, in a reducing environment, in the presence of the same carbon dioxide resulting from alcoholic and subsequent malo-lactic fermentation, the pomace is removed by soft pressing. Natural decanting without clarifiers. Unfiltered.

Aging: in steel for the next 2 years on its own noble lees; the wine is agitated about every 15 days. Minimal addition of sulfur dioxide in pre-bottling.

Organoleptic characteristics: golden yellow color, has intent-se fruity, herbaceous, floral and mineral notes. Medium-bodied, rich-co of extract and tannins, with excellent acidity and persistence.

Pairings: can be paired with all dishes that require a structured wine but with an important acidic part; perfect with main courses, fish or white meat.

Serving temperature: by serving it at different temperatures, it is possi-ble to grasp the many faces of this wine.

Recommended temperature: 10-12°C.

Denomination: IGP Salento Verdeca.
Varietal: 100 percent Verdeca.
Soil type: clay-loamy with considerable presence of siliceous pie-trisk and humus.
Breeding form: “Free Counterspalier” in honor of a book by Rudolf Steiner entitled “Philosophy of Freedom.”
Vineyard area: 2 hectares conducted with the criteria of Synergistic Agriculture and ICEA organic certification.
Plant density per hectare: 4,545 plants per ha.
Average age of vines: 22 years.
Yield per hectare: 90 q.li/ha.
Harvest: manual harvest, third decade of September.
Alcohol content: 11.5 percent vol.
