Pantelleria
. A territory that is not tamed Each year’s harvest tells of different sensations and potentials. This is more amplified in Pantelleria. A young, fresh and fruity passito, less complex and structured than the traditional Bukkuram, capable of providing pleasant sensations. Zibibbo 100% 2,500 vines per hectare cultivated with Pantelleria sapling, an agricultural practice declared a World Heritage Site byUnesco on Nov. 26, 2014, with roots originating between 1950 and 1970 in the C.da Bukkuram area of Pantelleria. 25 hl yield per hectare harvested the second week of August and the first week of September. Drying in the sun of 50 percent of the grapes for at least two weeks in special drying racks, bordered by large lava stone walls. The remaining part ripens on the plant until September. When fermentation is advanced, previously dried luva, and defatted by hand, is added to the wine, several times, and left to macerate for about three months until a balanced ratio of alcohol component to residual sugar is achieved. This is followed by aging for 6 months mainly in steel tanks and a quick passage into non-new French oak barrels.

Vinification: Drying in the sun of part of the grapes for at least two weeks in special drying racks, bordered by large lava stone walls. The remaining part matures on the vine until September to produce the wine, which, after fermentation with indigenous yeasts, will be macerated for about three months with the raisins, previously de-stemmed by hand, which yield sugars, color and aromas.

Refinement: after a short passage in barrels of at least 6 months, followed by refinement in steel tanks before going into bottles
