TERRITORY OF ORIGIN Marsala and Mazara del Vallo Agro of Marsala and Mazara del Vallo Province of Trapani
TERROIR Soil: medium-textured, tending to clay. Elevation: a few meters above sea level. Climate: Mediterranean, mild winters, limited rainfall, very hot and windy summer.
WINEMAKING AND REFINING Harvest time in the second decade of September, when ripening is advanced. Vinifi cation at 20°-22°C. Fermentation is arrested by addition of neutral alcohol. Next, cooked must is added. Minimum 24-month aging in oak barrels.
TASTING Color: light amber. Nose: balanced, with hints of apricot and dry fi co and pleasant vanilla notes. Taste: moderately dry with delicate apricot notes.
PAIRINGS Traditional: dry Sicilian desserts and marzipan cakes. Unconventional: wild pigeon breast stew in marsala wine wrapped in Nebrodi black pork lard. Serve at 12°-14°C.
