TERRITORY OF ORIGIN Marsala hinterland.
TERROIR Soil: medium-textured, slightly clayey. Altimetry: 100 to 200 meters above sea level. Climate: Mediterranean, mild winters, limited rainfall, very hot and windy summer.
WINEMAKING AND REFINING Harvest time in the second decade of September, when ripening is advanced. Fermentation at a temperature of 20°-22°C. Fortifi cation with pure wine alcohol until the optimal alcohol content is reached. Soleras method aging for more than 5 years in 100, 80 and 50hl oak barrels.
TASTING Color: deep gold. Nose: intense, with pronounced spicy notes and hints of toasted almond, hazelnut and pine nuts. Taste: dry but fresh, with pleasant notes of almond and hazelnut.
PAIRINGS Traditional: dry sweets with almonds, tagliancozzi, sesamini, 50% cocoa Modica chocolate, dry cigars. Unconventional: oysters or aged cheeses with citrus jams. Serve at 12°-14°C.
