An ancestral method from Pinot Noir grapes on the island of Lipari-it really is possible!
The pedoclimatic conditions of the Aeolian Islands and in particular of the estate’s vineyards, at once both characteristic of Mediterranean latitudes and somewhat continental, due to the strong winds that blow there and thus the resounding temperature range between day and night, convinced a few years ago to begin sapling training of a sacred and difficult variety such as Pinot Noir in one of the estate’s highest terraces.
So they chose to use the small amount available for a different wine, a fun and tasty bottle-refermented, dedicated to the underwater world of Marsili, Europe’s largest volcano, also part of the Aeolian island arc.
The goblet lights up with pink light and light effervescence, giving already at the first olfaction the images of a journey into a territory still unknown, yet pre-existing in memory. This is a wine that is outside the box, bold and yet also the result of an endless passion for the pursuit of quality in expressing the potential of the magical Aeolian terroir.
Bottled before the closure of spontaneous alcoholic fermentation, which takes place in steel tanks.

WINEMAKING
manually harvested grapes are pressed directly in a soft manner, followed by clarification of the must with cold static clarification and subsequent fermentation in temperature-controlled stainless steel tanks and bottling before alcoholic fermentation is closed.

A claret-pink wine with light, persistent bubbles, the nose is reminiscent of citrus juice and zest, mineral tones, fresh flowers, and herbs. It tastes deeply fresh and well-integrated savory, enveloping, taut and dry.
