AREA OF ORIGIN
Belice Valley. Dark alluvial and deep, medium-textured soils, silt-clay composition, good organic matter content.
Maceration for 12-15 days at 26°C with daily pumping over. Once racked, it is matured in first- and second-passage French barriques for about 8 months.
Deep red almost black color with violet hues. The nose develops aromas of plum and blackberry jam with spicy notes. In the mouth it is full and the tannins are not lacking while remaining fair and round. Excellent persistence and balance.
Charcuterie, foie gras pate, baked suckling pig. Serve at 12-14°C
