El Rey Zapoteco Espadin is made from the family’s “capon” estate, from Espadin agaves that are cut by hand with machete and hoe and baked with oak wood in an underground conical kiln made of earth-covered river rocks. Cooked agaves are crushed by the horse-drawn Chilean quarry tahona. Crushed agave fibers are fermented in outdoor pine vats using natural yeasts. Fermented agave is distilled twice in copper stills to produce a 45% ABV Espadin mezcal that is a highly accessible and versatile mezcal with a beautiful floral and pepper nose
spices and a clean, slightly smoky finish.
El Rey Zapoteco Mezcal
One of the oldest artisanal mezcal brands in Oaxaca that still produces its mezcal in-house, El Rey Zapoteco was founded in 1960 by Don SerafÃn Hernandez Blas in Santiago Matatlán. Today the business is run by family matriarch Doña Juana and Don Serafin’s children. Custodians of the agave fields that routinely produce some of the largest agaves in Oaxaca, the Hernandez family is a faithful guardian of production techniques that remain the same as they were at their founding.
