Exposure: north.
Soil: volcanic sands; exclusive boulders and rocks.
Grapes: 100% Nerello Mascalese.
Training system: sapling supported by stakes
chestnut tree. Plants up to 100 years of age.
Strains/Ha: an average of 7000 plants/Ha.
Average yield per hectare: 60 quintals.
Harvest: by hand, early September.
Vinification: light maceration in press, pressing
so “ce of the whole cluster and fermentation at temperature
controlled in steel with indigenous yeasts.
Method of production: refermentation in the bottle
(Classic Method).
Aging: 20 months of aging on the lees in the bottle.
Dosage: Brut.
Tasting
Soft pink in color with golden hues, it has an intense bouquet with notes of red fruits and citrus zest. The palate is savory and mineral with pleasant acidity. The perlage is fine and persistent.
