Palmento Costanzo Etna White Wine Contrada Cavaliere 2019 Cl 75
A family-run company, born after the restoration project of an ancient nineteenth-century millstone in 2010, by Mimmo and Valeria Costanzo who, in 14 hectares of property, of which ten dedicated to the vine at the foot of Etna (north side ), Produce wines based on native grapes: nerello mascalese, nerello cappo, carricante and catarratto.
A cellar with a modern spirit and attention to detail, which flows into innovative packaging, the multisensory label, in addition to the image of the volcano, is made thanks to a totally printable material pigment, extracted from the dust of Etna.
All the vines are sustained only in an organic regime, certified both in cultivation and in production.

Production area: Contrada Cavaliere, Santa Maria di Licodia, Etna.
Exposure: South.
Altitude: 950 mt. s.l.m.
Soil: volcanic sands; pebbles and effusive rocks.
Grapes: 100% Carricante.
Training system: small tree supported by chestnut poles. Plants up to 100 years of age.
Strains / Ha: on average 8000 plants / Ha.
Average yield per hectare: 40 quintals
Harvest: Manual, with selection on the vine, early October.
Vinification: Soft pressing and fermentation in steel with indigenous yeasts.
Aging: 12 months in steel and tonneaux in contact with the fine lees and 8 months in the bottle.
