Palmento Costanzo Etna Bianco Mofete 2022 Cl 75
A family-run business, established after the restoration project of an old 19th-century palmento in 2010 by Mimmo and Valeria Costanzo, who, in 14 hectares of property, ten of which are dedicated to vines at the foot of Etna (northern slope), produce wines made from native grapes: nerello mascalese, nerello cappuccio, carricante and catarratto.
A winery with the modern spirit and attention to detail, resulting in innovative packaging, the multi-sensory label, beyond the image of the volcano, is made thanks to a totally printable textural pigment, extracted from the dust of Etna.
All vines are sustained under organic regime only, certified in both cultivation and production.
Production Area: Contrada Santo Spirito, Passopisciaro, Etna | Northern exposure.
Grapes: Caricante 70% – Catarratto 30%.
Soil: black and brown volcanic sands; boulders and rocks and effusive.
Training system: sapling supported by chestnut poles. Plants up to 30 years of age.
Strains/Ha: an average of 8000 plants/Ha.
Average yield per hectare: 70 quintals.
Harvest: by hand, late September.
Vinification: soft pressing and fermentation in stainless steel with selected indigenous yeasts.
Aging: 4 months in steel in contact with fine lees and 2 months in bottle.
Alcohol content: 12% vol.
Tasting: medium straw yellow in color, it releases a fragrant bouquet with distinct citrus and mineral notes with hints of Mediterranean scrub. The palate finds an agile, fresh and savory sip.
Serving temperature: 10-12°C.
