Palmento Costanzo Bianco di Sei Etna DOC Bianco 2021
A family-run business, established after the restoration project of an old 19th-century palmento in 2010 by Mimmo and Valeria Costanzo, who, in 14 hectares of property, ten of which are dedicated to vines at the foot of Etna (northern slope), produce wines made from native grapes: nerello mascalese, nerello cappuccio, carricante and catarratto.
A winery with the modern spirit and attention to detail, resulting in innovative packaging, the multi-sensory label, beyond the image of the volcano, is made thanks to a totally printable textural pigment, extracted from the dust of Etna.
All vines are sustained under organic regime only, certified in both cultivation and production.
Production area: C.da Santo Spirito, Passopisciaro, Etna.
Exposure: north.
Soil: volcanic sands; exclusive boulders and rocks.
Grapes: Carricante 90% – Catarratto 10%.
Training system: sapling supported by chestnut poles. Plants up to 100 years of age.
Strains/Ha: an average of 7000 plants/Ha. Average yield per hectare: 50 quintals.
Harvest: by hand, late September.
Vinification: soft pressing and fermentation in stainless steel with indigenous yeasts.
Aging: 10 months in steel in contact with fine lees and 8 months in bottle.
Tasting
Straw yellow in color, it has a lively bouquet with notes of white flowers and citrus with hints of herbs and hydrocarbons. The palate is fresh and persistent with delicious mineral memories.
