Passito Di Pantelleria Pellegrino DOC 2020 Cl 50
The drying of the berries on trellises gives the Passito an intense texture of candied fruit and herbs, while the Moscato, born on fresh soils located at higher altitudes, expresses its delicacy through notes of yellow peach, melon and citrus. A different sweetness, in the two cases, but united by a savory trail given by the volcanic land, where the wind whips, the sea churns, the sun shines.

TERRITORY OF ORIGIN Island of Pantelleria
TERROIR Soil: volcanic in origin, sandy, slightly clayey. Altimetry: 0 to 300m above sea level. Climate: Mediterranean, mild winters, limited rainfall, very hot and windy summer.
WINEMAKING AND REFINING Harvest time in the first and second decade of September. Soft pressi ce of grapes, start of fermentation and addition of dried grapes. Aging in temperature-controlled steel tanks for 10 months.
TASTING Color: golden yellow tending to amber. Nose: sweet with clear notes of apricot, candied fruit and dry fi co. Taste: honeyed, with pleasant notes of dried apricot, dried fi co and cooked pear.
PAIRINGS Traditional: Sicilian ricotta and custard desserts; soft hearts with dark chocolate. Unconventional: jar with ricotta cream, pears and onion jam. Serve at 12°-14°C.
ALCOHOLIC STRENGTH 14.5% vol.
