PEPE is referred to when the berries come from a variety of tropical climbing plant in the piperaceae family.
Piper nigrum is marketed in 4 forms:
Green, black, red and white pepper.
Red is not to be confused with pink pepper, sometimes also called pink pepper (pink pepper) or red pepper.
BLACK PEPPER: Harvested before ripening, it designates the kernel, with its casing, which, when dried in the sun, turns black and wrinkled. It is the strongest pepper.
WHITE PEPPER: Harvested when ripe, its casing (pericarp) is removed by soaking and rubbing. The pepper turns white and smooth. Develops typical pepper notes, overlaid by a frank animal note.
GREEN PEPPER: Highly valued, it is harvested a month before ripening and then dried in an oven. Fresh is preserved in brine or vinegar. We offer it in dehydrated or brine form.
