Peppoli Antinori 2019 Chianti Classico Docg

A wine capable of representing the Chianti Classico territory and its historic variety through typical floral and fruity aromas.
Climate
The 2019 season was characterized by regular weather conditions, with winter tending to be cold and dry. The early spring was cool and rainy, especially in April and May. In June, a hot period but not marked by heat peaks, rainfall was slightly above average allowing proper growth of vegetation and clusters. The ideal weather conditions present in the period between late August and early October allowed the grapes destined for Pèppoli to ripen at their best. The harvest began on September 13 and ended during the first week of October.
Vinification
The grapes, harvested separately by variety, were destemmed, gently crushed and introduced into stainless steel tanks. Alcoholic fermentation took place at a controlled temperature between 26 and 28 °C so as to enhance aromatic expression and preserve the fruity and floral notes of each variety; maceration, managed with mechanical interventions aimed at extracting soft and sweet tannins, took about a week for Sangiovese and 12-15 days for the complementary varieties; at the end of malolactic fermentation, completed by the end of winter for all varieties, the wine was blended and transferred to wood, where it matured for about nine months in large Slavonian oak barrels and, for a small part, in barriques and stainless steel tanks. Bottling took place in December 2018.
