Manual grape harvest and selection. Gentle crushing and racking. Slow temperature-controlled fermentation in stainless steel tanks. Aged for 5-7 months on fine lees in steel drums.

Simple pairings
South Tyrolean starters made with speck, bresaola or venison salami, but also typical Italian dishes, such as Parma ham, sun-dried tomatoes and olive pâté, herb risotto, nettle gnocchi or red turnip dumplings. It also goes well with truffle recipes, not too spicy veal, and grilled fish.
