AREA OF PRODUCTION
Pinot Noir vines are located at altitudes ranging from 350 to 900 meters on very heterogeneous soils. High-density plantings ensure the highest quality grapes. The use of selected low-yielding clones ensures continuity in quality development.
METHOD OF WINEMAKING
The grapes are vinified in open tanks in which the fermenting must comes into contact with the skins through frequent pumping over and punching down. Through these techniques, the coloring substances and aromas contained in the peel are extracted and passed to the wine. Afterwards, the wine matures for a year in barrique and after bottling it is further aged for a few months in the bottle.
PAIRING
Pinot Noir goes very well with light fish dishes, game roasts and red meats.
