Cabernet “Porcupine” represents the first red wine from the Elena Walch winery. Originally composed mainly of Cabernet Franc with a small addition of Cabernet Sauvignon, this wine is named after the “Porcupine,” in reference to the small hedgehogs that populate the winery’s grounds. Today, the composition has changed, with 90% Cabernet Sauvignon and 10% Cabernet Franc. This change has given the wine a renewed elegance and finesse while maintaining its position as a favorite in the Walch house.
Cabernet “Porcupine” has a bright garnet red color and offers intriguing spicy aromas of red berries, cherries and seductive notes of white pepper and chocolate. On the palate, it stands out for its freshness, precise tannic structure and fruity-spicy density, with a lingering finish.
Harvest 2022: The 2022 vintage promises excellence, thanks to a warm and stable summer that produced high-quality, well-balanced grapes. Early flowering and a dry, warm summer season encouraged optimal ripening. Despite slightly lower acidity, the early harvest ensured the freshness and complexity of the wines.
Vinification: The winemaking process involves fermentation in steel with a 10-day maceration on the pomace, followed by malolactic fermentation in barrels. The wine ages for 12 months in French wood barrels before bottling, followed by a long aging in the bottle.
