Grape varieties: Frappato di Vittoria 40%, Nero d’Avola 60%.
Agriculture: organic.
Altimetry: 250 meters above sea level.
Soil type: red soils, from sub-Apennine sands, of Pliocene origin.
Training system: Guyot, espalier.
Planting density: 5,000 vines per hectare.
Average age of vines: 20 years.
Harvest time: late September/October.
Fermentation: spontaneous in terracotta amphorae on the skins, with indigenous yeasts.
Aging: amphora and bottle.
