SOIL TYPE: Soils with perfect exposure and bedding, black from lava sands and therefore extraordinarily rich in minerals with abundant, large structure; around, forests and more recent lava flows. ALTIMETRY: 850 meters above sea level.
YIELD PER HECTARE: 88 quintals.
GROWTH SYSTEM: espalier with spurred cordon and Guyot pruning system. PLANTING DENSITY: 5,050 plants per hectare. CULTIVATION METHOD: according to organic farming criteria and the SOStain® protocol; grassed soils with wild flora to increase organic matter, promoting the viability of soil microfauna; phytosanitary defense with sulfur and copper in minimal amounts; pest control with beneficial insects, sexual confusion and application of natural corroborants such as zeolite, kaolin and plant extracts.
HARVEST TIME: September 19-20. WINE-MAKING: The grapes were harvested early in crates so as to preserve their acidity; they were then crushed and destemmed and started in a soft press.
The decanted must is racked and fermented at 13 °C in steel tanks. The resulting wine remains until January on fine lees with continuous agitation; in late March it is prepared for tirage and bottled.
AGING: It stays on the lees on average for 20 months, around 12 °C, and then disgorgement takes place.

An extraordinary surprise that this Sicilian La Montagna gave us, thanks to the freshness of the Carricante harvested slightly before time and thanks to the fine sands that manage together to generate not only floral and never intrusive fragrances, but also a citric fruitiness of great minerality that supports a refined and persistent perlage. In the mouth, the wine flows very smoothly with a delicate flavor of cedar and passion fruit. Surprising flavor enchantment, rich and punctuated by Mediterranean scrub aromas on the finish. PAIRING: Perfect for starting, or ending, any evening, its acidic freshness allows it to reach where many wines may not dare such as a stir-fry or markedly greasy dishes.
