Planeta Cometa 2021, a great white wine from southern Italian grapes, able to compare with the world’s great whites: that was the initial plan. For this reason, experimentation with Fiano, a noble and ancient variety of Campanian origin, began in the 1990s.

• Soil: Variety of soils between Dispensa (medium loamy, calcareous) and Gurra (slightly calcareous, very loamy).
• Altimetry: Dispensa 75 meters above sea level; Gurra 35 meters above sea level.
• Yield per hectare: 70 quintals
• Training system: espalier with Guyot pruning system
• Planting density: 4,545 plants per hectare
• Cultivation method: Organic farming and SOStain® protocol

Time of Harvest and Vinification:

• Harvest time: September 25-28
• Vinification:
  • Grapes harvested by hand, refrigerated at about 12-13°C
  • Destemming, crushing and soft pressing
  • Static stainless steel sedimentation at low temperature
  • Fermentation in stainless steel (90%) and oak barrel (10%) at 14-15 °C for 12/14 days
  • Aged in steel and 25 hl barrel in 2nd passage Allier oak
  • Bottling: June 2022

Organoleptic Notes:

• Color: Very deep and intense ruby
• Nose: Notes of black currant, black cherry in spirit, dark chocolate, tobacco, clove, black pepper, and hints of Mediterranean scrub
• Taste: Mineral with traces of vibrant savoriness, silky finish with aftertaste of ripe apricots, blossoming almonds and basil leaf

Recommended pairings:

• Ideal with a snapper caught and put on the grill.

Harvest Notes – Menfi 2021:

• The harvest began on August 8 with Chardonnay, characterized by favorable weather and some well-distributed rains that mitigated the effect of the heat.
• The grapes were healthy and perfect, with production in the average range for a regular harvest.
