After a mild and rainy winter, March saw a temporary drop in temperatures with a few nights below 0°C just as budding began in the last week of the month. However, the newly bloomed shoots were still protected by the cottony bud tissue, which prevented frost damage. The rest of spring saw generally warm weather with normal rainfall, ensuring smooth vegetative development until flowering, which occurred between May 20 and May 25. In June, a rainy passage of great intensity in the middle of the month followed a very long dry spell with substantial absence of rainfall and torrid temperatures until the end of August. The veraison took place evenly and quickly between July 20 and 25, initiating the ripening of the grapes under a blazing sun. Harvesting began even before Ferragosto, on August 13, with Sauvignon clusters from the “millevites” to end on August 24. Exceptionally, Viognier and Verdicchio were also harvested during the same period, while Vermentino continued its maturation until September to be harvested the second week of the month. Early harvesting and the absence of marked water stress, thanks to abundant rainfall in June, allowed the expression of beautiful aromatic typicity, particularly of the Sauvignons.

VINIFICATION AND AGING

The grapes were harvested by hand in 15-kg crates in the early morning hours and immediately cooled upon arrival at the winery to keep all the aromatic potential intact. After careful selection, whole clusters were subjected to slow, soft pressing with maximum attention to protection against oxidation. After static decantation for about 12 hours, the musts were put into 25% new, 25% used, and steel and cement tanks (50%). Alcoholic fermentation took place at temperatures not exceeding 22°C. Malolactic fermentation was not carried out. Maturation was prolonged for 6 months on the lees with bâtonnage scheduled throughout. Blending of the various batches and a light clarification was carried out before bottling. The wine then underwent an additional 12 months of bottle aging before release.

On tasting, the wine fills the palate, with elegance and decision showing the right balance between acidic freshness and density. The finish proves to be lively, persistent and beautifully savory.”
