Pouilly Fumé Pascal Jolivet 2020
The Pouilly Fumé vineyards are located 200 km south of Paris on the right bank of the Loire River. Pascal Jolivet’s Domaine covers 8 hectares and is spread over the villages of Tracy and Les Loges. The proximity of the Loire River creates a special microclimate.

SOIL
Glaciation soils are of great variety, and differ among the various communes: – Les Loges: very calcareous soils that account for 50 percent of the mixture. – St Andelain: silty clay soils accounting for 30 percent of the mixture. – Tracy: of sand and the limestone soil background accounting for 20% of the mixture. Grapes from silty clay and siliceous soils produce fruit and develop more aromas. Concentration and matter are obtained from grapes from limestone soils.
WINE
The philosophy of the house is to let nature be in control. The juice from indigenous yeasts is fermented in temperature-controlled vats. Separate vinification of wines from the three terroirs allows their differences and complementarities to be fully expressed.
TASTING
Wine of character, marked by minerality, elegance and finesse. Terroir and provenance are perfectly expressed.
FOOD AND WINE PAIRING
seafood, shellfish, fish and goat cheese blend wonderfully with this typical Sauvignon.
