Pouilly Fumé Pascal Jolivet Les Terres Blanches 2019
The Jolivet family has been active in the wine business since 1926, when it began as négociant. It would have to wait until 1987 and the arrival of Pascal Jolivet to see the birth of the wines that bear his name. Immediately Pascal Jolivet established himself as a dynamic and revolutionary exponent having decided to exclusively vinify his Sauvignon Blancs with indigenous yeasts to better express the typical varietal characteristics. In a short time, Pascal Jolivet wines established themselves on the international wine scene for their distinct quality. Today Pascal Jolivet’s estate covers 95 hectares in the villages of Sancerre and Pouilly Fumé and 50 hectares in the Touraine area for the production of Attitude wine. Since 2013 Pascal Jolivet has enlisted the help of a young and talented winemaker of Friulian origin, Valentina Buoso, in the winery, an expert in winemaking with indigenous yeasts and, with equal expertise, in working with Sauvignon Blanc. Pascal Jolivet’s winery continues to work in an extremely natural way in the cellar, with very long fermentations and aging sur lies playing a key role in the concentration and complexity of the wines, characterizing them by their purity and elegance.

Vineyards The grapes that give rise to this cuvée are selected from estate vineyards and come from mainly clay-limestone soils. “Terres Blanches” is in fact the name given to the marly, limestone component of this particular terroir, which corresponds to 40 percent of Pouilly’s vineyards.
Vinification Alcoholic fermentation takes place in temperature-controlled stainless steel tanks and is spontaneous, using indigenous yeasts. Aging on fine lees always takes place in steel tanks.
Characteristics A rich wine with a distinct fruit character and incredible aromatic finesse.
