Providence Aged 3 YO Haitian Pure Single Rum
From the Distillerie de Port-au-Prince, in the heart of Haiti’s capital city, comes the first Providence put on aging. Cristalline sugarcane used for Providence rums comes from Michel Sajous in Saint-Michel-de-l’Attalaye, 150 kilometers to the north. Fermentation takes place with natural yeasts, allowing aromatic complexity to develop. The liquid obtained after fermentation is distilled in a bain-marie in a discontinuous copper still, built by Müller in collaboration with Vittorio Capovilla.
