Rhum Rhum Liberation 2020 45° Cl 70
Rhum Rhum Liberation 2020 is Pure Single Agricole Rhum made from an ancient sugarcane variety, Rouge B47,259, which has almost disappeared from the West Indies. Once perfectly ripe, the canes are cut by hand with traditional “coutelas,” transported to the distillery on “cabrouets” pulled by bulls. The freshly pressed juice is not diluted, as is usual in the production of rhum agricoles; fermentations take place in temperature-controlled open vats and last up to 5/6 days. After distillation begins a long period of rest in steel vats which, lasts up to a year, during which the alcohol content is slowly lowered. The rum is then aged in French oak barrels that have contained some of the best wines from France’s greatest crus. All Liberations carry the year of “liberation” from the barrel on the label. This version was bottled at 45°.
