Origins and Significance: The Pajè vineyard, rich in limestone marls with a high active limestone content, covers an area of 1.83 hectares, with a unique soil and microclimate. This natural amphitheater overlooks the Tanaro River valley, enjoying a southwest exposure that mitigates extreme temperatures and promotes optimal grape ripening.
Production Process: The vines, with an average age of between 25 and 50 years, are grown exclusively from mass materials obtained from pruning within the vineyard itself. Harvesting is done manually in October, when the grapes reach perfect physiological ripeness, and are carefully selected to ensure their integrity. The grapes are vinified in wooden vats using indigenous yeasts, followed by a fermentation that continues for about ten days. Next, the ancient technique of submerged cap splint maceration is applied, which lasts for 2 months / 2 1/2 months (60-70 days). The wine then matures in neutral oak barrels for about 5 years, developing complexity and depth.
Notes Characteristics: Bottle production is extremely limited, with less than 10,000 bottles produced per vintage. Each bottle is numbered, evidence of the attention to detail and quality that characterizes the work of the Roagna winery.
