Roagna Barbaresco Paje 2017 Docg cl 75
Pajè is particularly rich in calcareous marls, with a high content of active limestone.
Spread over an area of 1.83 Ha with unique soil and microclimate, the Pajè amphitheater opens onto the Tanaro River valley, which mitigates cold winters and hot summers.
It is a small tongue of land facing southwest.
The vines for this wine range in age from 25 to 50 years, where the average age is over 40; the vines are exclusively of massal origin with wood obtained in pruning from this vineyard.
The vineyard is harvested in October, at perfect physiological ripeness.
Harvesting is by hand, in small boxes.
Before being vinified, the grapes follow 2 manual selections to check the prefect integrity of the fruit.
Fermentation takes place exclusively in wooden vats thanks to a pied de cuve of Indigenous yeasts: it lasts for about ten days and then the ancient maceration technique of submerged cap splinting is applied, which lasts for 2 months / 2½ months (60-70 days).
At this point the wine matures in a neutral oak barrel for about 5 years.
Bottle production is very limited, with less than 10,000 bottles per vintage.
