St Lucia Rum The Forgotten Casks Chairman’s Reserve is a meditation rum, with a long artisanal aging process, produced to replicate the unique flavor found in the barrels that survived the disastrous fire that struck the Saint Lucia distillery in May 2007. During reconstruction, the Cellar Master found unusual places for barrel storage, resulting in these “Forgotten Casks.” The rum is too aged to be included in the Original Chairman’s Reserve, so it was decided to create a limited edition acclaimed worldwide.

• RAW MATERIAL: Molasses
• DISTILLATION: Union of rums distilled by continuous and discontinuous method
• COLOR: Dark mahogany
• AROMA: Intense notes of raisins, tobacco, honey and vanilla
• FLAVOUR: Intense with hints of tropical fruit, caramelized nuts and delicate spices, with a long and surprisingly lingering finish

AGEING: The rum is aged separately by batch and type of distillation in ex-Bourbon barrels. After blending, the rum rests in oak barrels for an additional 6 months. Average aging ranges from 6 to 11 years.
