The Distillery Collection is a limited edition showcasing the fruit of Diplomático’s various distillation processes. Characterized by the individual personality of each rum, Distillery Collection No. 3 presents the most classic and rare expression: the Copper Pot Still Rum.

The Pot Still copper still was brought to the La Miel distillery in 1959. This batch distillation method was originally used in Scotland for whiskey production. Produced using the best selection of sugar cane honeys, the spirits are aged in American white oak barrels until they reach the perfect degree of maturity, resulting in a complex rum. This rum represents the heart of Diplomático’s flavor profile.

Through distillation in Pot Still, a very complex distillate is produced, thanks to the use of sugar cane honeys and a prolonged fermentation process that allows rich scents and aromas to develop. During the distillation process, the rum develops an additional sensory profile, combining red and tropical fruits with underlying notes of toffee and vanilla. Balanced and well-structured on the palate, where notes of wood combine with coffee and dark chocolate. The finish is long and persistent. It best expresses its personality when savored neat.
