El Dorado 15 rum is considered the flagship, most significant release, of Demerara Distillers, winner of the gold medal at the IWSC for multiple consecutive years. Aged for a minimum of 15 years in ex-bourbon barrels, it is a blend of rums distilled in the wooden Coffey Still, formerly of the Enmore Distillery, rums distilled in the double Pot Still in wood of the Port Mourant distillery and the Single Pot Still of Versailles.

Guyana is one of the last remaining pristine countries, covered almost entirely by virgin Amazon rainforest.
Demerara Distillers near the capital Georgetown is the only distillery in the country and produces the El Dorado brand and is also the source of many excellent selections of rum. The distillery’s history is rooted in the country’s own history: after the closure of eight of Guyana’s last nine distilleries after World War II, it is the only one left in operation and today houses stills from the other closed ones. The decision to keep the stills was as far-sighted as ever on the part of the legendary ‘Chairman’ Yesu Persaud, now 86 years old, in order to be able to continue to produce these different typicalities of the tradition. El Dorado today is a blend of the different stills and thus is the mixture of these typicalities.
The town is crossed by the Demerara River, on whose banks the sugarcane variety of the same name is grown, excellent for the production of Demerara sugar and rum. Molasses are clearly proprietary and are also sold in much of the Caribbean. Demerara Distillers produces its own yeasts for fermentations. Today at Diamond, that’s the distillery’s proper name, there are 13 stills, including 3 double coffey still ‘Tricanada’ columns, 2 modern Indian technology multiple columns, 2 savalle stills, 1 wooden double pot still (the famous Port Mourant), 1 wooden single pot (Versailles), 1 wooden coffey column (Enmore), 1 Wedderburn style copper still, 1 traditional copper still, 1 small gin still batch. With each of these stills, Demerara Distillers produces one or more rums, referred to as ‘marks.’ The barrel stock, one of the most important in the world with about 100,000 units, houses numerous different rums and some very old, recognizable by the initials, or ‘marks’ precisely, brushed on the barrel itself. The different labels of El Dorado correspond to different blends of these ‘marks’ rums. This means that they are not all the same rum of different ages, but rather are different combinations.
Demerara means great quality and great diversity. It is not just a style unto itself, but a unique identity within which great diversity coexists, which assembled give El Dorado its unique multifacetedness.
