Cloudy Bay has the reputation of a refined, elegant white Sauvignon, and the 2017 vintage is not an exception despite the critical harvest conditions.
harvest
The harvest of the Sauvignon Blanc 2017 started on April 1st and ended on April 20th. The grapes were harvested with mature aromas and an excellent acid balance.
winemaking
After the harvest, the juice was cold-cooled for 48-72 hours before decanting. Fermentation in stainless steel tanks with a mixture of yeasts and wild yeasts. About 3% of the mixture is fermented at warm temperatures in old French oak barrels and large format tanks. As usual, our sauvignon blanc is rigorously mixed, including only the strongest lots.
