” Without Caramel “ The winemaker was a professional, part alchemist and part pharmacist, who prepared herbal medicinal infusions with digestive and invigorating properties. One day Leone asked his winemaker, Giuseppe Magliani, a digestive to be consumed after work dinners, one that was not too herbaceous and bitter like the ones he was offered and that reminded him of a gentian digestive he had drunk at Bardonecchia in Piedmont. He asked him to use some ingredients that he thought could impart digestive properties, create an appealing aroma, such as citrus and artichoke. Thus it was that the recipe for the bitter was developed, which Leone jealously kept in his mobile bar and offered to those who frequented his home. Alcohol present in the recipe allowed all the pharmacodynamic substances, contained in the herbs, to be conveyed: thus, a tonic, digestive and highly palatable drink was obtained, which we present again today. The deep amber color is achieved without the use of caramel, but with fruit extract.
