Harvest: Manual in boxes with plastic crates made before full ripening

Fermentation: In temperature-controlled stainless steel tanks (14°) for about 20 days

Aging: In stainless steel tanks for 7-8 months

Bottle aging: On the lees for 2.5 to 3 years

Remouage: With giropalettes

Potential: >5 years after degorging.
