Deep, mixed limestone and chalky, hilly terrain whose elevation varies between 230 and 270 meters above sea level.

COLLECTION
Harvested by hand in small boxes.
After further selection, the grapes are destemmed. A very soft crushing follows. Continuous pumping over allows the substances contained in the skins to be extracted. The maceration time is about eighteen days at a controlled temperature.
Approximately fourteen months in French oak barrels (Nevers, Tronçais, Allier), 1/3 of which are new 225-liter barrels, and at least twelve months of bottle aging before release.
