Vinification
Manual grape harvest and selection. Gentle crushing and racking. Slow temperature-controlled fermentation in stainless steel tanks. Aged for 6-7 months on fine lees in steel drums.

Simple pairings
Mixed seafood with raw shrimp and scampi, vegetable risotto, creams made with root vegetables (potato or celery soup), dishes with cheeses that are not too aromatic (e.g., soft robiola) such as cheese dumplings or a pasta topped with cheese. It also goes well with salt-crusted sea bass or veal paillard.
