“This noble Pinot Noir grows in vineyards at medium to high and elevated altitudes between 450 – 600 m a.s.l. Here, descending air currents cool the temperature even in midsummer. It has been cultivated in our areas since the mid-19th century, especially the older vineyards give a structured and elegant Pinot Noir.”

Vinification
Manual grape harvest and selection. De-stemming of the clusters followed by slow fermentation at controlled temperature and gentle handling of the must in stainless steel tanks. Malolactic fermentation and aging for 12 months, partly in large wooden barrels (30%) and partly in barriques (70%). One-third new barrels are used for barrel aging. Blending three months before bottling.

It goes very well with roe deer back with apple and red wine puree and ricotta dumplings, poppy-flavored suckling veal back, baked sirloin with herbs, mashed potatoes and chestnut ragout, veal liver with butter and thyme, veal paillard with Mediterranean vegetables, or even orzotto or smoked venison with cranberry and horseradish sauce
