Pressing: Grapes harvested by hand in small boxes in the early morning hours; destemmed and softly crushed

Alcoholic Fermentation: Approximately 12 days in truncated-conical steel vats with daily cap breaking carried out by fulling

Refinement:

• 12 months in French oak tonneau
• 30% of the mass refines in steel tanks

Bottle Aging: At least 6 months at constant temperature (18°C)
