CLIMATE
Mediterranean, mild winters, limited precipitation, very hot and windy summers.
COLLECTION
Burning by hand between October and November.
WINEMAKING
Careful selection of grapes. Temperature-controlled fermentation 28-32 °C. Maceration of about 16-18 days with good use of the delestage technique.
AGING
18-24 months in new French oak barrels.
REFINING
For 12 to 14 months in the bottle.
